Boiled Spud Lite potatoes with garlic oil, spring onions and grated parmesan

Serves: 4 to 6

INGREDIENTS

  • 500gr Baby Spud Lite
  • 50gr finely chopped garlic
  • ½ bunch chopped spring onions
  • 100gr grated Parmesan
  • 80mls olive oil
  • Cracked salt and pepper

METHOD

Step 1 - Boil Potatoes

Put baby Spud Lite potatoes into a pot and cover with cool water. Place on stove and bring to a boil. Boil for approximately 15 to 20 minutes, until soft in the middle. Drain cooked potatoes.

Step 2 - Fry Ingredients

Heat a large fry pan with oil, now fry the garlic, chopped spring onions and baby Spud Lite with cracked salt and pepper.

Step 3 - Bake in Oven

Once golden brown place in a serving dish, top with cheese and bake in the oven or griller.

Step 4 - Serve

Once the cheese is melted your Spud Lite meal is ready to serve.
