Smoked Salmon & Potato Salad, Dill Cream, Pepper & Capers

Serves: 4 to 6

INGREDIENTS

  • 300gr Spud Lite potatoes
  • 200ml sour cream
  • ½ fine diced red onion
  • ½ cup chopped dill
  • 20gr chopped capers
  • 200gr smoked salmon
  • Skewers of choice

METHOD

Step 1 - Boil Potatoes

Put Spud Lite potatoes into a pot and cover with cool water. Place on stove and bring to a boil. Boil for approximately 15 to 20 minutes, until soft in the middle. Drain cooked potatoes. Once cool slice into wedges.

Step 2 - Mix Ingredients

Into a large bowl add in sour cream, diced red onion, chopped dill and chopped capers. Mix these together.

Step 3 - Add Spud Lite Potatoes

Add the sliced Spud Lite potatoes into the large bowl mix and combine.

Step 4 - Wrap & Serve

Lay out slices of smoked salmon and place the dressed potato slices onto the salmon and wrap. Place skewer through to hold salmon in place.
