INGREDIENTS
- 6 medium to large pealed Spud Lite potatoes
- 4 large cloves of garlic finely chopped
- 250ml natural or Greek yogurt
- ½ lemon squeezed
- Small handful chopped mint
- 80ml olive oil
- Cracked salt and pepper
METHOD

Step 1 - Chop and Boil Potatoes
Roughly chop the pealed Spud Lite potatoes and place into a pot and cover with cool water. Place on stove and bring to a boil. Boil for approximately 15 to 20 minutes, until soft. Drain the potatoes and leave aside in strainer.
Step 2 - Cook Seasoning
Dry wipe pot and place back on heat, add olive oil, garlic and cracked salt and pepper and fry.
Step 3 - Mash Potatoes
Once fried remove from heat, add potatoes into the pot and mash.
Step 4 - Season Potato Mash
Now fold in lemon, yogurt and mint using a wooden spoon.
Step 5 - Serve
Your tasty, fresh mash is now ready to serve for the family.
