OVEN BAKED SPUD LITE

INGREDIENTS
FRESH INGREDIENTS
- 4 Large sliced brown onions
- 500gr Baby Spud Lite
- 100gr Sliced coloured capsicum’s (colours optional)
- ½ Red onion sliced
- 2 Garlic cloves crushed
- 150gr no crust wood oven bread
- Salt and pepper
- 2 Fresh basil leaves
- 80ml Olive Oil
METHOD
Step 1 - Cook Potatoes
Pre heat the oven to 180 degrees. Now place Baby Spud Lite onto a baking tray, dress in olive oil and put into oven for 20 minutes or until golden brown.
Step 2 - Fry Away
In a hot frying pan add olive oil, red onion, capsicum, garlic and salt and pepper, now fry until soft. Once soft place into a large bowl.
Step 3 - Fry Wood Oven Bread
Now in the frying pan add some olive oil and chunks of wood oven bread, fry until golden brown.
Step 4 - Mix Ingredients Together
Place the warm potatoes and wood oven bread into the large bowl with the other ingredients.
Step 5 - Serving
Now serve with fresh basil leaves. Add extra herbs and cheese as desired. (You can cut into the middle of the potato and stack the ingredients inside)
