Broiled Spud Lite Potatoes with Garlic Oil, Spring Onions and Grated Parmesan
SERVES: 4 - 6
INGREDIENTS
- 500gm Baby Spud Lite
- 50gm finely chopped garlic
- ½ bunch chopped spring onions
- 100gr grated Parmesan
- 80mls olive oil
- Cracked salt and pepper
METHOD
Step 1 -Boil Spud Lite Potatoes
Put baby Spud Lite potatoes into a pot and cover with cool water. Place on stove and bring to a boil. Boil for approximately 15 to 20 minutes, until soft in the middle. Drain cooked potatoes.
Step 2 - Fry Ingredients
Heat a large fry pan with oil, now fry the garlic, chopped spring onions and baby Spud Lite with cracked salt and pepper.
Step 3 - Bake In Oven
Once golden brown place in a serving dish, top with cheese and bake in the oven or griller.
Step 4 - Serve
Once the cheese is melted your Spud Lite meal is ready to serve.
