FRENCH ONION SOUP WITH RED ONION BRUSCHETTA

SERVES: 4 - 6

INGREDIENTS

FRESH INGREDIENTS

  • 4 Large sliced brown onions
  • 500ml beef stock (or 80gr stock powder with 500ml water)
  • 80ml worcestershire sauce
  • 60ml sweet soy sauce
  • 20gr brown sugar
  • 20ml vegetable oil

 

RED ONION BRUSCHETTA

  • ¼ cup of finely chopped red
  • ¼ cup of finely chopped red and yellow capsicum
  • ¼ cup of finely chopped spring onions
  • ½ cup of cheese

METHOD

Step 1 - Cook Onions

Heat vegetable oil in a medium sized sauce pan adding sliced onions. Cook onions on a low temperature until they are soft and caramelised (leave some onion aside to fry for topping).

 

Step 2 - Caramelise Onions

Stir in brown sugar, continue to stir until the onion is caramelising with the sugar.

 

Step 3 - Add Stock & Sauces

Add in stock, worcestershire sauce and sweet soy sauce and allow to simmer, seasoning with salt and pepper.

 

Step 4 - Prepare Bruschetta

Whilst the soup simmers, cut a diagonal piece of Turkish bread. On top of the Turkish bread spread red onion, red and yellow capsicum, spring onions and cheese.

 

Step 5 - Grill Bruschetta

Place in the oven to grill until brown.

 

Step 6 - Fry Onions

Fry the onions left on the side.

 

Step 7- Serve

You can now serve your soup in a suitable sized bowl, topping with fried onions and placing grilled bruschetta on the side.
