Garlic and Chive Mashed Spud Lite Potato

INGREDIENTS
FRESH INGREDIENTS
- 1.5kg Spud Lite potatoes, peeled and diced
- 80g unsalted butter
- 1 clove garlic, crushed
- 1 cup milk
- 1/3 cup sour cream
- 1/4 cup chopped chives
- 1/4 cup pecorino cheese, grated
- salt flakes and freshly ground black pepper
METHOD
Step 1 - Boil Spud Lite Potatoes
Steam potatoes for 15 minutes or until very tender. Drain saucepan and return potatoes to the pan. Using a potato masher or ricer, mash potatoes until smooth. Return pan to a medium heat, stirring constantly for 1-2 minutes, to help potato dry out.
Step 2 - Add Garlic
Heat butter in a small frying pan over a low heat. Add garlic and cook for 2 minutes. Add milk and sour cream to pan, stirring until heated through.
Step 3 - Finish Mash To Serve
Pour milk mixture over the mashed potatoes. Add chives, pecorino, salt and pepper, stirring until mixture is super smooth.
