PERFECT SPUD LITE ROAST POTATOES

INGREDIENTS
- 1kg Spud Lite potatoes, peeled and quartered
- 2 tablespoons olive oil
- Salt and pepper
METHOD
Step 1
Preheat oven to 220°C (200°C fan-forced) and line a large baking tray with baking paper.
Step 2
Steam potatoes for 10 minutes or until edges are tender. Drain saucepan and return potatoes to the pan and cover with a lid. Shake vigorously to fluff up the edges of the potatoes. Add olive oil and season with salt and pepper. Shake again until well coated.
Step 3
Place potatoes on prepared baking tray in preheated oven for 50 minutes or until golden, turning half way through.
