Smoked Salmon and Potato Salad, Dill Cream, Pepper and Capers
SERVES: 4 - 6
INGREDIENTS
- 300gm Spud Lite potatoes
- 200ml sour cream
- ½ fine diced red onion
- ½ cup chopped dill
- 20gm chopped capers
- 200gm smoked salmon
- Skewers of choice
METHOD
Step 1 -Boil Spud Lite Potatoes
Put Spud Lite potatoes into a pot and cover with cool water. Place on stove and bring to a boil. Boil for approximately 15 to 20 minutes, until soft in the middle. Drain cooked potatoes. Once cool slice into wedges.
Step 2 - Mix Ingredients
In a large bowl add in sour cream, diced red onion, chopped dill and chopped capers. Mix these together.
Step 3 - Add Spud Lite Potatoes
Add the sliced Spud Lite potatoes into the large bowl mix and combine.
Step 4 - Wrap & Serve
Lay out slices of smoked salmon and place the dressed potato slices onto the salmon and wrap. Place skewer through to hold salmon in place.
